"...We saw the beauty of their
work. We saw and admired the strength of the cultivator's spade that
has cut the stone feet of the mountains and goes on to their
ridges, gathering in blocks the few soil, just to make it vine. Most
of the little mountains are bold and stone, they have been
unbelievably scratched and decorated by vines that the more
bitterness they absorbed from the workers' bodies in order to turn the flints
into vineyards, the more sweetness they get to the grapes and the more they
pay back to the landlord who can sell it well. This is the secret of
the glory of Siatista..."
(Thoughts of a man of
letters that visited Siatista during the decade of 20', as it has
been registered
in I. Apostolou' s book HISTORY OF SIATISTA)
Vine-growing has been strongly
connected with the financial life of Siatista. It is the beginning
of its economical success and its support when the other sources let
the town down, when the economical crisis reappears...All these come
out of the study of Siatista's financial life and all of us we have
experience them even until nowadays.
The "katoia" (cellars) are
special places in Siatista's houses, where the barrels with Siatista
wine are kept and where there are all the tools and the machines
that are required for producing wine.
